what you need
10 rock oysters
1/2 cup chicken stock
2 teaspoons gelatine
zest of one lime
juice of one lime
60ml gin
1/2 red chilli finely chopped
tabasco sauce to taste
1 lime, sliced into thin wedges
what to do
Divide oysters between 10 shot glasses.
Bring stock to the boil, remove from heat. Add gelatine and stir until gelatine has dissolved. Stir in all other ingredients. Cool to room temperature.
Pour mixture evenly over oysters. Top with lime wedges.
Chill for 1-2 hours until set.
