what to do
Melt butter with olive oil in fry pan.
Add prawns and cook for about 30 secs
Put crushed garlic in fry pan
add the Brandy or white wine
Reduce liquid until nearly all gone
add the shallots and cream
Boil until cream thickens and reduces slightly.
