what you need
1.6 kg ripe figs
1 cup sugar
1/2 cup honey
3 tbsp finely grated
lemon zest
1 cup water
what to do
trim off hard stem-end and slicing each fig into quarters. Place in an saucepan with rest of ingredients. Bring slowly to a simmer and keep simmering for 15 minutes until figs are soft. With a wooden spoon, break up any large pieces and keep cooking slowly for another 10 minutes or so until jam is thick.
lace in a clena sterilized jar and refrigerate.

Mama had a fig bush and she and grandma both would make preserves. I believe this is simple enough that I could make it and I love fig preserves on toast. Thanks!
